TOMATO BRUSCHETTA

INGREDIENTS

  • 2 cups of tomato, peeled, seeded and chopped
  • 1 ½ teaspoon capers (optional), chopped
  • 2 tablespoons of chopped black olives
  • 1 tablespoon of red onion, finely chopped
  • 2 tablespoons chopped basil
  • 2 tablespoons of extra virgin olive oil
  • ¼ teaspoon of YUCA’S balsamic vinegar
  • Pepper
  • Salt
  • 10 slices of 1.5cm thick baguette bread cut diagonally and lightly toasted

PREPARATION

Mix all the ingredients, except bread. Let stand ½ hour and drain.

Place a tablespoon approximately on top of each slice.

It is served as an appetizer.
